I am a creature of habit and eat the same thing for breakfast almost everyday. My go to breakfast is the English Muffin With Egg and Spinach. I cam up with it when I was trying to find a way to get some veggies in my morning meal.

English Muffin with Egg and Spinach (6 Points Plus)
1 Light Thomas English Muffin
1 Egg
1/2 Cup Chopped Spinach, drained and cooked.
2 TSP Parmesean Cheese
1 TSP Olive Oil
Salt and Pepper To Taste

Slice and place the english muffin in the toaster. While that is toasting, spray a one cup measuring cup with cooking spray and crack the egg in the cup and place it in the microwave for 47 seconds. In the mean time, mix the cooked chopped spinach, parmesean cheese, and olive oil in a small bowl. When the english muffin is done toasting, place the spinach on the bottom and the egg on top of that and enjoy your breakfast sandwich.

To save time, I usually cook and drain two 10oz boxes of frozen chopped spinach on Sunday to have ready to heat a serving during the week day mornings. I am a picky vegtable eater so I like some brands of chopped spinach better than others so you might have to try a couple to find one you like best
